October 3rd - October 7th

Thanks again for another incredible week :o) I am so grateful for those of you who allow me to cook for you! This week we have some new meals in the rotation along with some old favorites. There are also some health conscience choices that I hope you enjoy!

Monday, October 3rd
Cuban Street Tacos -- These tacos are delicious. They have slow roasted pork that have absorbed spices by cooking for over 12 hours. Touches of fresh orange and lime give them a lightness and freshness that you will love. The tacos come with 4 flour shells, sliced red onion, cheese, cilantro and lime wedges. $12

Confetti Rice and Bean Salad -- A healthy salad to have with your Tacos or alone. Brown and wild rice blend with beans, corn, onions and peppers. The dressing is extra virgin olive oil and vinegar with just the right seasoning. You will love it. 1/2 Quart $4, Quart $7

Snickerdoodles -- Snickerdoodles are a lovely little cookie rolled in cinnamon sugar. In the sugar cookie family. You will love them if you have never tried them. $10 per Dozen


Tuesday, October 4th
Creamy Chicken Soup -- This is for sure one of my all time favorite things to eat. It is always met with rave reviews. The chicken is slow roasted over night and then made into a creamy soup base with lots of vegetables and cheese and old fashioned noodles. Love this soup. $7 Quart, $24 Gallon

Dinner Rolls -- Tender dinner rolls made from scratch the morning of delivery. Served with a bonus sample of fresh black berry jam. 1/2 Dozen $4, Dozen $7

Chocolate Truffle Cake -- This is the best chocolate cake ever. It is baked in a bundt pan and is dense and moist. If that isn't enough, it has milk and semi sweet chocolate chips baked into it. This cake is excellent and decadent for days. Mark's favorite cake. $20


Thursday, October 6th
Chicken Spaghetti -- Okay. I grant you that this sounds a little weird and I was never going to offer it; however, I am a compassionate person and am willing to put something on the menu that provides so much comfort and joy. It sounds a little weird, I know. My grand kids love it -- more than they love me. It is a casserole made with spaghetti noodles, a slightly spicy, creamy sauce with onions and peppers and cheese. Lots of it. If you don't like casseroles, go for the shrimp below. If you love comfort food consider giving this a try. 8x6 $13, 9x13 $24

Rolls -- Rolls seem to go well with anything. This is no exception! Eat with the Chicken Spaghetti or the Shrimp Orzo. 1/2 doz $4, 1 doz $7

Roasted Shrimp & Orzo -- This is the return of a Barefoot Contessa favorite. This is a great main course salad served at room temperature. I couldn't be the only one who just smiles when eating orzo. I hardly ever eat it, but when I do, I love it. It just makes me smile. Orzo is the base of this salad. Also included is roasted shrimp, cucumber, red onion, green onion, feta cheese, fresh lemon and fresh dill. It's dressing base is extra virgin olive oil. This is light, healthy and incredible! I'm so excited to share it with you. If orders are low, it's just more for me :o) Quart $7, Gallon $25

Sept 26 - Sept 29 (Plus Conference Special)

Thanks so much for such a successful week last week! I hope this week is as well received. I love the cool fall nights. In honor of that, I'm featuring two soups this week.

Monday, September 26rd
Tortellini Soup -- This is a beef based soup. It has summer vegetables along with spinach and tender tortellini. This is a soup that always gets rave reviews when I serve it. $7 Quart, $24 Gallon

Italian Breadsticks -- Fresh homemade breadsticks with an Italian butter and herbs baked in and crowning these addicting treats! 1/2 Doz $4, 1 Doz $6

Fresh Peach Pie -- My favorite thing about this pie is that the crust does not get soggy like with a traditional peach pie and you can finish off the next day... if there is any left! This pie has a cookie/shortbread crust. Fresh, tree-ripened peaches are next with an amazing glaze. It wouldn't be complete without real whipped cream on the top and a peach fan for garnish. Hooray for peach pie! $15

Tuesday, September 27th
Creamy Chicken Enchiladas -- This is my most popular special order. They are great to eat the day they are delivered or frozen for later! Slow roasted chicken in a green chili creamy sauce. Rolled in flour soft shells tortillas and smothered in creamy sauce and cheese. Excellent to freeze or to eat! $14 8x6; $25 9x13

Black Bean & Corn Salsa -- Black beans and tender shoepeg corn combined with red onions, Roma tomatoes and fresh cilantro. The dressing is made with extra virgin olive oil and balsamic vinegar. Healthy and great tasting! This salsa is excellent, excellent, excellent on the creamy enchiladas, but is also great served with corn tortillas. $4 1/2 Quart; $7 per Quart

Refried Beans -- Pinto Beans soaked and simmered with just the right amount of spices. 1/2 Quart $4, Quart $6

Pumpkin Pie -- It's that season. There's nothing like a real, homemade pumpkin pie. Have a gratitude day early this year and order pumpkin pie and think about all your blessings. $15


Thursday, September 29th
Corn Chowder -- The chowder has a creamy base with three varieties of corn, crispy peppered bacon, cheese and potatoes. It's a winner and is comfort food at its finest! Quart $7, Gallon $24

Italian Breadsticks -- These breadsticks have a unique garlic and Italian herb butter on them when taken from the oven, so it soaks in! These are definitely a favorite whenever I offer them! 1/2 Doz $4, 1 Doz $6

Banana Pudding -- This pudding was offered recently, but is back for an encore. This rich pudding will take you back to your childhood when you wanted to hang onto the summer just a little longer. I made this a couple months ago and my sweet grandson loved it so much I made it at least once a week for a month. I could convince him to do anything for banana pudding. This pudding is rich and creamy for adults and has vanilla wafers layered into it just for the fun of being a kid. Topped with real whipped cream. $8 Quart

Sunday, October 1st -- Make conference special this year. Freshly baked cinnamon rolls with cream cheese frosting. It's a great new tradition! 9x13 pan (approx 12 rolls) $12

Here's the menu for next week. Every week I think it is my favorite, but I think this week really may be :o)

Monday, September 19th
Lasagna -- Layers of pasta, pork and beef, three cheeses and tomato sauce. It is layers of goodness and comfort food. 8x6 $13, 9x13 $24

Caesar Salad -- Baby heart of Romaine lettuce, Parmesan cheese, croutons and a creamy Caesar dressing. It's perfect for an Italian meal. Qt. $6

Garlic Knots -- Tender rolls infused with garlic butter. I'm going to try a sprinkling of Parmesan on top. I have great hopes and expectations for the enhancement. 1/2 doz $4, 1 doz $6

Banana Cream Pie -- Flaky pie crust with fresh sliced bananas in a homemade custard. All topped with freshly whipped cream. It's a winner. $15

Tuesday, September 20
Pulled Pork -- Tender, slow-roasted pork with just the right amount of barbecue sauce. This was very popular last time. Pulled pork also freezes well if you don't like the long wait in between offerings. 1/2 qt $9, 1 qt $16

Baked Beans -- These beans are perfect to round out the meal. Made with peppered bacon, sweet onions, green and red peppers. They will delight your taste buds. Qt $7

Coleslaw -- Green and red cabbage thinly sliced with red onion and carrots. All in my mother-in-law's special creamy dressing. Qt $7

S'more Cookie Bars -- These may look like a blondie bar, but they are so much more. With a graham cracker base, chocolate and marshmallows, they are so much more magical and delicious! They are so much easier than building a fire and making a s'more. They are great. $7 per dozen

Thursday, September 22
Taco Soup -- A family favorite. This is a humble little recipe, but oh so good. I love the flavors and the way they meld together. Made with lean ground beef and homemade refried beans. It also boasts of extra sweet shoepeg corn, sweet onions, homegrown tomatoes Quart $7, Gallon $24

Taco Soup Fixin's -- Many times by the time I finish taco soup, I don't worry about thefixin's that make it sooo good. To avoid you not getting your maximum enjoyment I am taking care of that for you. Your care package will include a bag of tortilla chips, sour cream, sliced green onions, and grated cheddar cheese. Your life, or at least your meal, will be complete. $6 per quart

Cornbread -- At the risk of bragging, I make a very, very good cornbread. Its mild and not to "corny". A perfect accompaniment to the taco soup. Served with homemade honey-butter. An 8x6 pan for $7

Monday, September 12th
Chicken Pasta Spinach Salad -- This is a great salad. It's my go-to for showers, taking a meal into someone, etc. Tender chicken with corkscrew pasta and spinach in a mild dressing. Cashews and sunflower seeds round out the medley of deliciousness. Quart $7, Gallon $24

Homemade Rolls -- Fresh, delicious rolls to go with your salad. 1/2 Dozen $4, 1 Dozen $7

FHE Treat (Chocolate Chip Cookies) -- I'm going to offer a family friendly treat each Monday. It will be something easy, and that you could make yourself if you had the time or desire :o) If you order the FHE only, you can pick up at my house between 5 - 6. If I'm delivering other food Monday to you, I will deliver it with the other food. This week will be chocolate chip cookies. Who doesn't like chocolate chip cookies? Mine have semi sweet and milk chocolate chips in them and made with real butter and vanilla bean paste. $7 per dozen

Wednesday, September 14th
Chili Verde -- I love chili verde. Its so versatile and delicious. Pork is slow roasted to perfection, then shredded and simmered with onions, green chilis and other herbs and spices. You can order this "straight" to eat as you wish, or I will make into enchiladas for you. Straight Chili Verde: 1/2 Quart $9, 1 Quart $16. Bean enchiladas (flour shells) smothered with Chili Verde and Cheese: 8x6 $11, 9x13 $20; Chili Verde enchiladas (flour shells) smothered with Chili Verde and Cheese: 8x6 $13, 9x13 $22

Homemade Refried Beans -- Pinto Beans soaked and simmered with just the right amount of spices. Quart $6

Lemon Cupcakes -- I've been told by more than one person that these are the best cupcakes ever, any where. Fresh lemons in the cupcake and the frosting. I have new boxes so that they will reach you in perfect condition :o) $10 dozen


Thursday, September 15th
French Onion Soup -- The perfect meal for when the nights start to cool down. I won't pontificate about how much I love this soup. It's one of my favorite things in the world. Onions are caramelized and simmered for hours. French herbs are added to the beef base along with demi glaze and simmered again. You will receive toasted Parmesan baguettes and a four cheese blend that you can melt over the individual soup servings. Quart $7, Gallon $24

Crescent Rolls -- Made fresh and the perfect thing to eat with soup. 1/2 Doz $4, 1 Dozen $7
