November 21st - November 25th

Well, here it is. My favorite week of the year. I love cooking Thanksgiving dinner and am excited to cook for you this week! I realize that we need to eat prior to Thursday, so there are selections offered Monday and Tuesday. Tuesday is soup only, since I will be beginning the Thanksgiving preparations.

Monday, November 21
Honey-Lime Enchiladas -- These enchiladas are great and one of my favorite menu items. Tender, slow cooked chicken, with fresh herbs, fresh lime juice and honey in a green enchilada sauce. Of course, there's plenty of cheese in these darlings also! I'm pretty sure that this will be a family favorite. 8x6 $13, 9x13 $22

Homemade Refried Beans -- Homemade beans made from scratch. Slow cooked with bacon and chilis to offer a flavor that you will love. 1/2 Quart $4, 1 Quart $7

Fresh Homemade Salsa -- Freshly made salsa with fresh onions, tomatoes, chilis and cilantro. Please note if you would like extra peppers to add heat; otherwise, salsa is mild/medium. 1/2 Quart $6, Quart $10

Tuesday, November 22nd
Taco Soup -- A family favorite. This is a humble little recipe, but oh so good. I love the flavors and the way they meld together. Made with lean ground beef and homemade refried beans. It also boasts of extra sweet shoepeg corn, sweet onions, homegrown tomatoes Quart $7, Gallon $24

Thursday, November 24th
Appetizers
Artichoke Dip -- There are a lot of artichoke dips out there. This is my favorite. It has the perfect amount of spinach, artichoke, Parmesan cheese ratio. 9" pie pan $10

Pumpkin Dip -- The perfect dip for Thanksgiving. Serve with gingersnaps, pretzels or apple slices. 9" pie pan $10

Relish Tray -- Includes baby carrots, celery sticks, broccoli, red peppers, green peppers, baby cucumbers, and grape tomatoes. Includes homemade buttermilk ranch dip. $10 (This will come in ziploc bags for you to serve on your own platter)

The Main Event
Brined Turkey -- If you have never had a brined turkey, prepare to have the most moist turkey you have ever tasted. This is one item that the reality does not exceed the hype. Flavor and juiciness is locked into the turkey. Turkey will be delivered Wednesday evening so that you can cook the bird as early as you would like on Thanksgiving! Turkey will be in brining bag so that it can continue to soak until you are ready to cook. Homemade brine has fresh orange peel, apple juice, fresh rosemary, Egyptian bay leaves to name a few ingredients. Turkeys will be fresh, never frozen birds. Pricing: Less than 12 pounds, $32.98, 12-15 pounds, $36.85, 15-18 pounds $40.72, 18-20 pounds $43.30, and 20-22 pounds $45.88. This is a pre-pay item! Payment must be made prior to November 21st.

Cranberry Sauce -- Fresh cranberries and oranges combined to make a fantastic cranberry sauce for your Thanksgiving table. 1/4 Qt. $4, 1/2 Qt. $8

Homemade Rolls -- Freshly made homemade rolls. $6 per dozen

Traditional Homemade Stuffing-- . Sauteed onions, celery in real butter added to homemade bread cubes. Seasoned with highest quality herbs and spies. 8x6 or Quart (for stuffing turkey) $7, 9x13 $14

Sweet Potatoes -- Sweet potatoes baked, mashed and mixed with just the right amount of sweetness. It's topped with a crumb mixture. My family swore they didn't like sweet potatoes until these little gems came along. $9 for 9" pie pan ready to bake

Apple Pie -- Homemade pastry on top and bottom of the pie. Filled with apple filling made with fresh local apples. Seasoned with vanilla bean, Saigon Cinnamon, and a touch of nutmeg. $17

Here's the menu for the upcoming week. The featured items don't per se go together. When I offered something "more adult" I tried to put a more kid-friendly entree with it.

Monday, November 14th
French Onion Soup -- If you've read this blog for very long, you know that I love French Onion Soup. I could eat it every day. The caramelized onions in the rich, deep beef broth made with three types of demi-glaze just make me happy. The toasted baguette bread and the three-cheese mix to broil on top, just make my day. I love this soup. Quart $7

Autumn Pear Salad -- Red and green leaf lettuce combined with pears, Asiago cheese and cashews. Served with an olive oil balsamic vinegar, honey mustard dressing. $7 quart

Macaroni & Cheese -- Mac and Cheese may have an ordinary reputation, but this version is dressed up enough for everyone to enjoy, yet retains it's roots enough to still be true comfort food. You will be delighted with the three cheese blend used to make this dish. The bread crumbs that top the mac and cheese is a perfect finish. 8x6 $12, 9x13 $22

Tuesday, November 15th
Pulled Pork -- There's nothing quite as tender and delicious as slow cooked pork that naturally shreds and begs to be a sandwich. This is it. If you love pork. This is what you've been waiting for.

Baked Beans -- These beans are perfect with pulled pork. Thick, peppered bacon is combined with sauteed onions, red and green peppers and beans. Sweet and tangy and delicious. $7 Quart

Coleslaw -- This coleslaw is made with green and purple cabbage along with red onion, carrots in a creamy dressing. $7 Quart

Caramel Apples -- Tart, crisp, juicy apples covered in sweet, rich caramel. It's the essence of fall. $3 each. Toppings available for 50 cents each topping, each apple. Sorry that I can't offer the previous pricing from a couple weeks ago, but I only pay to make items once :o) Toppings include Oreos, mini M&Ms, peanuts, almonds, white chocolate (with cinnamon sugar,if desired), or semi sweet chocolate.

Thursday, November 17th
Carmella's Chicken Salad -- This salad was featured at Carmella's a lovely little restaurant formerly in Alpine. Noodles, chicken, celery, olives, and Mandarin oranges in a creamy Oriental dressing. Served with Chinese noodles and toasted sesame seeds. $8 Quart

Creamy Chicken Enchiladas -- This classic dish is perfect comfort food and great to feed a hungry family. Slow oven roasted chicken in a creamy sauce smothered with cheese. 8x6 $13 9x13 $24

Black Bean and Corn Salsa -- Black beans, corn, red onion, tomatoes and fresh cilantro with an extra virgin olive oil and balsamic vinegar dressing. Very healthy and full of fiber and taste!! Great with the enchiladas above or with multi-grain baked chips. 1/2 quart $5, 1 quart $8

Pizza Rolls -- I haven't met a kid, or kid at heart, that didn't love pizza rolls. Pepperoni and mozzarella cheese wrapped in tender bread. All topped with an Italian, garlic butter. Marinara for dipping comes with this. 8x6 $12 9x13 $20

Chili Verde -- I love chili verde. Its so versatile and delicious. Pork is slow roasted to perfection, then shredded and simmered with onions, green chilis and other herbs and spices. You can order this "straight" to eat as you wish, or I will make into enchiladas for you. Straight Chili Verde: 1/2 Quart $9, 1 Quart $16. Lasagna --Freshly made lasagna with beef and pork as well as three types of cheese.   It is layers of luscious-ness at its best.  8x6 $13  9x13 $25

Chicken Pot Pie -- Creamy chicken base filled with delicious vegetables including carrots, potatoes, onions, celery, peas and corn.   This is very similar to my creamy chicken soup.  Topped with a flaky, hand-made pie crust.    A very popular item.   8x6 $13  9x13 $25

Rolls -- Tender, hand made crescent rolls.  1/2 Dozen $4, 1 Dozen $6

Sweet & Sour Chicken -- For the "vintage" 11th ward members, remember when Bishop LeBaron was bishop and we always had sweet and sour chicken for funerals?    It was so delicious and a labor of love.  I've been craving that lately.  Tender chicken pieces battered and deep fried with sweet and sour sauce.   You finish baking either tasting or remembering how awesome this is :o)   The meal includes 2 quarts rice and 1 quart meat, 1/2 qt sauce (so it doesn't get soggy before you bake)     You may order 1/2 a meal for smaller families or appetites!   Chicken, sauce, and rice $22

Caramel Apples --- Tart, juicy apples covered in sweet caramel.   The ultimate fall treat.  Choose between  plain, toasted almond or bittersweet chocolate add-ons.    $1.30 each (The apples used are smaller than at some retail stores.  If you would like that size apples, please contact me for a quote.)   Great for visiting teaching or home teaching treats.   So convenient that it's the end of the month :o)

Puppy Chow -- A very casual treat, but one Weisenburgers have enjoyed for many years. Some people refer to these as Muddy Buddies, but it will always be Puppy Chow to us. Baked Ziti -- This is one of my most ordered items. Ziti pasta is swimming in a creamy red sauce along with three other cheeses. 8x6 $13, 9x13 $24

Chocolate Cream Cake -- This chocolate cake has a thick layer of whipped cream in the middle, which is why my family refers to it as the "ding-dong" cake. It is enclosed with chocolate buttercream that is light and delicious. $25

Chicken Alfredo -- The smooth garlic infused cream sauce is a great dinner. Oven roasted

Chicken & Ham -- I've been holding out all of these months. This is my most beloved recipe as taught to me by my mother-in-law. The story she told me was that Elizabeth Taylor used to fix it for Richard Burton... I think that was his name. Anyway, this is an incredible meal and one that we almost always have for special events. The ham and chicken are fall off the bone tender in a sauce with just a hint of orange. 8x6 $15 (approx. 4 pieces of ham and chicken), 9x13 $30 (approx 8 pieces of ham and chicken).

Mashed Potatoes & Gravy -- Creamy mashed potatoes with gravy made from the chicken and ham sauce. It is slightly sweet and is a favorite. 8x6 $10

Thanks again for another incredible week :o) I am so grateful for those of you who allow me to cook for you! This week we have some new meals in the rotation along with some old favorites. There are also some health conscience choices that I hope you enjoy!

Monday, October 3rd
Cuban Street Tacos -- These tacos are delicious. They have slow roasted pork that have absorbed spices by cooking for over 12 hours. Touches of fresh orange and lime give them a lightness and freshness that you will love. The tacos come with 4 flour shells, sliced red onion, cheese, cilantro and lime wedges. $12

Confetti Rice and Bean Salad -- A healthy salad to have with your Tacos or alone. Brown and wild rice blend with beans, corn, onions and peppers. The dressing is extra virgin olive oil and vinegar with just the right seasoning. You will love it. 1/2 Quart $4, Quart $7

Snickerdoodles -- Snickerdoodles are a lovely little cookie rolled in cinnamon sugar. In the sugar cookie family. You will love them if you have never tried them. $10 per Dozen

Creamy Chicken Soup -- This is for sure one of my all time favorite things to eat. It is always met with rave reviews. The chicken is slow roasted over night and then made into a creamy soup base with lots of vegetables and cheese and old fashioned noodles. Love this soup. $7 Quart, $24 Gallon

Dinner Rolls -- Tender dinner rolls made from scratch the morning of delivery. Served with a bonus sample of fresh black berry jam. 1/2 Dozen $4, Dozen $7

Chocolate Truffle Cake -- This is the best chocolate cake ever. It is baked in a bundt pan and is dense and moist. If that isn't enough, it has milk and semi sweet chocolate chips baked into it. This cake is excellent and decadent for days. Mark's favorite cake. $20


Thursday, October 6th
Chicken Spaghetti -- Okay. I grant you that this sounds a little weird and I was never going to offer it; however, I am a compassionate person and am willing to put something on the menu that provides so much comfort and joy. It sounds a little weird, I know. My grand kids love it -- more than they love me. It is a casserole made with spaghetti noodles, a slightly spicy, creamy sauce with onions and peppers and cheese. Lots of it. If you don't like casseroles, go for the shrimp below. If you love comfort food consider giving this a try. 8x6 $13, 9x13 $24

Rolls -- Rolls seem to go well with anything. This is no exception! Eat with the Chicken Spaghetti or the Shrimp Orzo. 1/2 doz $4, 1 doz $7

Roasted Shrimp & Orzo -- This is the return of a Barefoot Contessa favorite. This is a great main course salad served at room temperature. I couldn't be the only one who just smiles when eating orzo. I hardly ever eat it, but when I do, I love it. It just makes me smile. Orzo is the base of this salad. Also included is roasted shrimp, cucumber, red onion, green onion, feta cheese, fresh lemon and fresh dill. It's dressing base is extra virgin olive oil. This is light, healthy and incredible! Monday, September 26rd
Tortellini Soup -- This is a beef based soup. It has summer vegetables along with spinach and tender tortellini. This is a soup that always gets rave reviews when I serve it. $7 Quart, $24 Gallon

Italian Breadsticks -- Fresh homemade breadsticks with an Italian butter and herbs baked in and crowning these addicting treats! 1/2 Doz $4, 1 Doz $6

Fresh Peach Pie -- My favorite thing about this pie is that the crust does not get soggy like with a traditional peach pie and you can finish off the next day... if there is any left! This pie has a cookie/shortbread crust. Fresh, tree-ripened peaches are next with an amazing glaze. It wouldn't be complete without real whipped cream on the top and a peach fan for garnish. Hooray for peach pie! $15

Tuesday, September 27th
Creamy Chicken Enchiladas -- This is my most popular special order. They are great to eat the day they are delivered or frozen for later! Slow roasted chicken in a green chili creamy sauce. Rolled in flour soft shells tortillas and smothered in creamy sauce and cheese. Excellent to freeze or to eat! $14 8x6; $25 9x13

Black Bean & Corn Salsa -- Black beans and tender shoepeg corn combined with red onions, Roma tomatoes and fresh cilantro. The dressing is made with extra virgin olive oil and balsamic vinegar. Healthy and great tasting! This salsa is excellent, excellent, excellent on the creamy enchiladas, but is also great served with corn tortillas. $4 1/2 Quart; $7 per Quart

Refried Beans -- Pinto Beans soaked and simmered with just the right amount of spices. 1/2 Quart $4, Quart $6

Pumpkin Pie -- It's that season. There's nothing like a real, homemade pumpkin pie. Have a gratitude day early this year and order pumpkin pie and think about all your blessings. $15


Thursday, September 29th
Corn Chowder -- The chowder has a creamy base with three varieties of corn, crispy peppered bacon, cheese and potatoes. It's a winner and is comfort food at its finest! Quart $7, Gallon $24

Italian Breadsticks -- These breadsticks have a unique garlic and Italian herb butter on them when taken from the oven, so it soaks in! These are definitely a favorite whenever I offer them! 1/2 Doz $4, 1 Doz $6

Banana Pudding -- This pudding was offered recently, but is back for an encore. This rich pudding will take you back to your childhood when you wanted to hang onto the summer just a little longer. I made this a couple months ago and my sweet grandson loved it so much I made it at least once a week for a month. I could convince him to do anything for banana pudding. This pudding is rich and creamy for adults and has vanilla wafers layered into it just for the fun of being a kid. Topped with real whipped cream. $8 Quart

Sunday, October 1st -- Make conference special this year. Freshly baked cinnamon rolls with cream cheese frosting. It's a great new tradition! 9x13 pan (approx 12 rolls) $12

Garlic Knots -- Tender rolls infused with garlic butter. I'm going to try a sprinkling of Parmesan on top. I have great hopes and expectations for the enhancement. 1/2 doz $4, 1 doz $6

Banana Cream Pie -- Flaky pie crust with fresh sliced bananas in a homemade custard. All topped with freshly whipped cream. It's a winner. $15

Tuesday, September 20
Pulled Pork -- Tender, slow-roasted pork with just the right amount of barbecue sauce. This was very popular last time. Pulled pork also freezes well if you don't like the long wait in between offerings. 1/2 qt $9, 1 qt $16

Baked Beans -- These beans are perfect to round out the meal. Made with peppered bacon, sweet onions, green and red peppers. They will delight your taste buds. Qt $7

Coleslaw -- Green and red cabbage thinly sliced with red onion and carrots. All in my mother-in-law's special creamy dressing. Qt $7

S'more Cookie Bars -- These may look like a blondie bar, but they are so much more. With a graham cracker base, chocolate and marshmallows, they are so much more magical and delicious! They are so much easier than building a fire and making a s'more. They are great. $7 per dozen

Your life, or at least your meal, will be complete. $6 per quart

Cornbread -- At the risk of bragging, I make a very, very good cornbread. Its mild and not to "corny". A perfect accompaniment to the taco soup. Served with homemade honey-butter. An 8x6 pan for $7

Chicken Pasta Spinach Salad -- This is a great salad. It's my go-to for showers, taking a meal into someone, etc. Tender chicken with corkscrew pasta and spinach in a mild dressing. Cashews and sunflower seeds round out the medley of deliciousness. Quart $7, Gallon $24

Homemade Rolls -- Fresh, delicious rolls to go with your salad. 1/2 Dozen $4, 1 Dozen $7

FHE Treat (Chocolate Chip Cookies) -- I'm going to offer a family friendly treat each Monday. It will be something easy, and that you could make yourself if you had the time or desire :o) If you order the FHE only, you can pick up at my house between 5 - 6. French Onion Soup -- The perfect meal for when the nights start to cool down. I won't pontificate about how much I love this soup. It's one of my favorite things in the world. Onions are caramelized and simmered for hours. French herbs are added to the beef base along with demi glaze and simmered again. Week of Sept 5 - 9

Since Monday is Labor Day, I will be taking a day off, since I assume everyone is out having one last fun day together before the cold weather sets in. Cooking days this coming week are Tuesday, Wednesday, and Thursday.

Tuesday, September 6th
Chili -- With the weather turning colder, I thought a great bowl or two of chili would be great. I would like to tell you that I soak the beans and loving cook them until perfect, but the cold, hard truth is that Bush beans are the best in my mind. It is just what brings in the compliments, so I must use them :o) Besides the beans, there is ground beef, home canned tomatoes and a special blend of spices. Quart $7, Gallon $24

Buttermilk Scones (pre-cooked or dough) -- I've been making these for many years. It's the best scone recipe I've come across. If you want to fry them yourself, let me know. Otherwise, I'm happy to do so in canola oil and you can re-heat them or eat them at room temperature. We've been known to enjoy them either way. They are the perfect accompaniment to chili. Dozen $8

"Fixin's Package -- I will pull together the cheese, sour cream, and green onions. Please order a fixin's package per quart of chili :) $3

Honey Butter -- Just to make those scones a little better in case you aren't eating them with chili on top. You may also choose raspberry honey butter, if you prefer. Just let me know. 4 oz $4

Pizza Rolls -- I've succumbed to peer pressure and brought back the pizza rolls before I normally would have. They were just too popular. Pepperoni and mozzarella cheese rolled into a dough with Italian spiced butter. You bake so that you can enjoy them fresh from the oven with the marinara sauce that is provided. 8x6 pan $12

Light Pasta Salad -- This salad is a great summer salad with flavors that only can be found in the summer. Angel hair pasta, fresh basil, tomatoes, and roasted pine nuts. All this goodness in garlic extra virgin olive oil. Oh, did I mention the Parmesan cheese? $7 quart, $24 Gallon

Banana Pudding -- This rich pudding will take you back to your childhood when you wanted to hang onto the summer just a little longer. I made this a couple months ago and my sweet grandson loved it so much I made it at least once a week for a month. I could convince him to do anything for banana pudding. This pudding is rich and creamy for adults and has vanilla wafers layered into it just for the fun of being a kid. Topped with real whipped cream. $8 Quart

Chicken Pot Pie -- If I have a signature dish, this just may be it. I make it for friends, family, and company. Creamy filling loaded with carrots, peas, corn, and potatoes to name a few and topped with a handmade pie crust. Total comfort. 8x6 $12, 9x13 $24

August 29th - September 1st

I was just thinking summer was finally here and the nights are already cooling down. I can't say I'm too sad. My kitchen will be substantially cooler and more comfortable :o) Pumpkin bread and cookies will be here, but I refuse until September, although it sounds sooo good! Fall is my favorite season, so I'm excited about the change! For this week's menu I'm mixing some old favorites with a new recipe or two. I hope that you enjoy it!

Baked Ziti -- This was a favorite last time I cooked it.
This is one of my favorite Italian dishes and one that's easy to transport and re-warm. It's great to have one of these darlings in your freezer at all times! You will love the garlic tomato sauce with fresh herbs. You'll love the three cheeses. It's the perfect amount of sauce to cheese. A true family pleaser! 8x6 $12, 9x13 $22

Caesar Salad -- Classic Caesar salad with creamy Caesar dressing, freshly grated Parmesan and croutons. Quart $6, Gallon $22

Garlic Knots -- Perfect with Italian food! They have a unique garlic and Italian herb butter on them when taken from the oven, so it soaks in! These are definitely a favorite whenever I offer them! 1/2 Doz $4, 1 Doz $6

Peach Pie -- Peaches are finally ripe! I have several peach pies that I make. This is one of the favorites! If I say so myself, my Dad and brother grow the world's best peaches. It's not just me I have many people confirm it on Saturday mornings at farmer's market. I think it's a combination of his orchard being right next to the mountains and cool nights and that they are grown with love. My favorite thing about this pie is that the crust does not get soggy like with a traditional peach pie and you can finish off the next day... if there is any left! This pie has a cookie/shortbread crust. Fresh, tree-ripened peaches are next with an amazing glaze. It wouldn't be complete without real whipped cream on the top and a peach fan for garnish. Hooray for peach pie! $15

Beef Stew -- Surprisingly (to me), this has been one of the most popular items offered. Slow cooked stew meat with big chunks of vegetables (carrots, onions,celery, and potatoes) in a rich beef sauce made with demi-glaze and delicious beef juices. This will remind you of childhood days and the great outdoors. 1 Quart $7, 1 gallon $24

Baking Powder Biscuits -- These biscuits are tender and flaky and great served along side or warmed up on top of the beef stew. Yummmmm. 1 dozen $6

Apple Crisp -- Fresh apples (Guess what? Grown on my Dad and brother's farm with love!) cut up and baked to perfection with just the right amount of Siagon Cinnamon and Nutmeg. Topped with a crunchy topping. 8x8 pan $15

Chicken Honey Lime Enchiladas -- This is a very popular enchilada recipe that has been going around for the last year or so. Anything that stays around that long deserves your attention! Tender, slow cooked chicken, with fresh herbs, fresh lime juice and honey in a green enchilada sauce. Of course, there's plenty of cheese in these darlings also! Monday, August 22nd
This meal is specifically in honor of the lovely Miss Sarah. She loves everything on the menu. Happy birthday Sarah. You make my heart sing and my soul rejoice.
Creamy Chicken Soup -- This was the first thing that I offered on this little venture. This soup was originally from Donna Leichty. It is one of my definite go-to's. Carrots, onions, potatoes and peas in a creamy sauce. Homemade noodles (not by me, that's what they are called, but they taste like homemade!) compliment the vegetables. This is basically the same recipe as used in my pot pie (without the noodles). I love this soup. A lot. Qt $7, Gallon $24

Homemade Rolls -- Sarah loves these. It's a sad day when there are no rolls on cooking day. 1/2 dozen $4, 1 dozen $6

Red Velvet Cake -- This has been a tradition for Weisenburger birthdays for generations. We've been eating this cake for over thirty years... long before its resurgence of popularity. Red velvet cake screams "you are special" and "it's a special day". I make it with traditional frosting. Recently, this frosting made its rounds around the blog world as "the world's best frosting". I've been making it for decades. The icing is my favorite. $25

Wednesday, August 24th
Pulled Pork -- This is made from pork shoulder which is oven slow roasted for 10 hours minimum. The barbecue sauce is then added and the barbecue is simmered again. The quart (32 oz) should serve 8 (4 oz servings). 1/2 quart $9, quart $16

Coleslaw -- Coleslaw is made with green and red cabbage along with red onion, carrots, and a creamy sauce. The coleslaw is great on top of the barbecue or as a side dish. It's great. $7 quart

Macaroni Salad -- This macaroni salad is a old Weisenburger recipe. My family loves it. The salad has pasta, olives, red onion and diced pickles in a tangy creamy sauce. That did not sound that appealing, but most people love it. (Disclaimer: I do not eat pickles, nor olives, so this isn't my favorite, but I do find myself eating a little.) 1/2 quart $4, quart $7

Baked Beans -- My baked beans are loved by many. They are the perfect accompaniment for a casual meal. I was teased a little about the comment about the gentleman running a mile in the rain for these beans until the person actually tasted them. I didn't hear anything after that. Quart $6

Tomato Basil Soup -- I love making tomato soup. It's been a slow, slow year for tomatoes, but I'm hoping they will be available for the big soup making day. I went on a journey for the best tomato basil soup and you may have the result. It tastes like fresh tomatoes, boasts of fresh basil, and other vegetables. Then just the right amount of cream is added to make this the perfect summer meal. 1/2 quart $4, Quart $7

Italian Bread -- This round Italian loaf goes perfectly with the tomato soup. It's one of my favorites! $5 round loaf

Chicken Lemon Basil Salad -- This is my signature summer salad. It just screams summer. Chicken with pasta with cucumber, red onions, and grape tomatoes in a fresh lemon and basil sauce. Quart $7

Strawberry Lime Shortcake with Coconut Cream -- Moist sour cream pound cake with cut strawberries and just a hint of lime. All topped with a coconut whipped cream. This is a fresh spin on an old favorite. This dessert comes "de-constructed" so that you can put it together at your convenience. $22

Bacon Corn Chowder -- This soup was met with many compliments and requests to put on the menu again. The chowder has a creamy base with three varieties of corn, crispy peppered bacon, a little cheese and potatoes. It's a winner and is comfort food at its finest! Quart $7, Gallon $24

Tuesday, August 16th
Pizza Rolls -- These little sweeties are pizza in finger food fashion! These are baked in "pull-apart" fashion. Pepperoni slices with mozzarella cheese inside of pizza dough and rolled into bite size fashion. All topped with an Italian butter mix and Parmesan cheese. You will bake so that you can enjoy them hot! Includes a marinara sauce for dipping. You may consider ordering more than one. They always go fast at my house! 8x6 $12

Caesar Salad -- A great companion to pizza rolls, especially if you are over 14 :o) Includes Caesar dressing. Quart $7, Gallon $24

Seasoned Bread Sticks -- Bread sticks topped with Italian butter mix. These are yummy! 6 for $4

Brownies -- My favorite brownies. They are chocolate-y (made with Italian cocoa), but not too gooey and not too cake-like. Frosted with buttercream or you can order just powdered sugar... I'm not getting into that debate! 9x13 pan $12

Thursday, August 18th
Chicken Alfredo -- Creamy, garlic infused creamy Alfredo sauce with penne pasta (that you have it in the middle of the pasta too!) Added to this luscious-ness is slow roasted chicken and Parmesan cheese. You may have to exercise the next day, but it will be worth it :) 8x6 $12; 9x13 $22

Chicken Pasta Spinach Salad -- This is a great, light meal. It features corkscrew pasta, spinach, Parmesan cheese, chicken and cashews. This is one of my most requested recipes over the years. If you haven't tried it, I strongly recommend it :o) Quart $7, Gallon $25

Crescent Rolls -- In my mind, you have to have rolls with Chicken Pasta Spinach Salad. These are freshly made and buttered as they come out of the oven. 6 for $4 or $7 per dozen


Tuesday, August 9th
Tortellini Soup -- This is a beef based soup. It has summer vegetables along with spinach and tender tortellini. This is a soup that always gets rave reviews when I serve it. $7 Quart, $25 Gallon

Italian Herb Bread -- This bread is very similar to the bread served at Macaroni Grill. It is great to eat with butter or dipped in olive oil and balsamic vinegar. $4 per large round loaf

Thursday, August 11th
Chicken Oriental Salad -- This recipe is based on the wonderful Carmella's restaurant in Alpine years ago. Pasta noodles, green onions, Mandarin oranges, and tender chicken chunks with a creamy oriental dressing. The salad is crowned with toasted sesame seeds. When my grand daughter was blessed a couple months go I served five soups and five salads and various desserts. This was by far the most commented and complimented item, yes, even more than my beloved red velvet cake. 1 Quart $7, 1 Gallon $25

Parmesan Knots -- Tender, flaky rolls tied in a knot and topped with Parmesan cheese. You will love them. $4for 6 or $7 a dozen

Man, where does the time go? Where did summer go? To be honest, I'm ready for it to cool down a little. Fall is my favorite season, but we don't have to worry about that for a little while. Here's the menu for next week. I've tried to put in some variety and focus on comfort food :o)

Monday, August 1st
Clam Chowder -- I love clam chowder. I've made many a different versions, but this is the best. This chowder has onions, potatoes and clams swimming in a rich creamy base. I put in extra clams, because it's hard to have too many! You'll love it! Quart $7, Gallon $24

Crescent Rolls -- When I made clover rolls (which about half turned into crescent rolls) I remembered how much I loved this roll recipe. It's actually the Lion House roll recipe. They are wonderful! Yum! 1/2 Doz $4, 1 Doz $6

Peanut Butter Crispy Bars -- There is a very popular bakery in New York called Baked. This is one of their most popular recipes. It's an adult version of a rice kriCheck Spellingspy treat. The bottom "crispy" layer is candied. The next layer is peanut butter and chocolate. The top layer is a thick ganache. I'm pretty sure you will love it :) 8x8 pan $12

It has pasta, salmon, red peppers, onion and Swiss cheese in a unique dressing which boasts a hint of horseradish. I always receive rave reviews on this salad. Served with fresh lemons. Chocolate Cream Cake -- Many recipients of this cake call it the "ding-dong" cake. Between two luscious layers of chocolate cake is real whipped cream. The cake is surrounded in a fluffy buttercream icing made with Italian cocoa. It is one of my favorites! $25

French Onion Soup -- This is the soup that I think is my best. I went on a quest to make French Onion Soup a couple years ago and am quite proud of the results :o) Slow, carmelized onions in a rich beef broth with French herbs and Demi-Glaze to deepen the flavors. All of this topped with a toasted baugette and a blend of four cheeses. Delicious! I can't wait! $7 quart, $25 gallon

Lemon Tart -- Homemade lemon custard in a shortbread crust. It's a lovely way to end a meal. $15

Chili Verde -- I believe that this is the most popular thing that I have made in my little venture. Pork Roast slowly roasted to ensure melt in your mouth tenderness. Creamy Enchiladas -- Slow roasted chicken in a green chili creamy sauce. Rolled in flour soft shells tortillas and smothered in creamy sauce and cheese. Excellent to freeze or to eat! $14 8x6; $25 9x13

Black Bean & Corn Salsa -- Black beans and tender shoepeg corn combined with red onions, Roma tomatoes and fresh cilantro. The dressing is made with extra virgin olive oil and balsamic vinegar. Healthy and great tasting! This salsa is excellent, excellent, excellent on the creamy enchiladas, but is also great served with corn tortillas. $4 1/2 Quart; $7 per Quart

Celebrate July 24th with Little or No Cooking :o)

The 24th is on Sunday this year. Whether you are celebrating Saturday or Sunday, you can minimize your time and effort by ordering sides for your celebration activities!

Broccoli Salad -- I know this is a repeat from Friday, but just in case any one wanted this excellent side dish for your celebration, here you go. Fresh broccoli, craisins, cashews, crisp bacon, purple onions in a creamy sauce. If you aren't serving until Sunday, the bacon and cashews can be packaged separately so that you can combine them right before serving. Quart $7

Baked Beans -- It's hard to have a summer barbeque without baked beans. These are killer baked beans. Crisp peppered bacon, sauteed green and red peppers in a sweet and tangy sauce. The beans are slow cooked for hours to perfection. All you have to do is warm up. Quart $6

Potato Salad -- Another classic. Very traditional. Very good. Must have. Quart $6

Black Bean Salsa -- I love black bean salsa. Everyone has a different version of it. Mine boasts of tender shoepeg corn, black beans, purple onion, Roma tomatoes and fresh cilantro. Pork Chops and Rice or Pork Chops with Stuffing -- I love homemade stuffing and love it combined with sauteed pork chops with a creamy sauce on top. I hoard Williamas Sonoma Turkey Herbs every fall and have enough to make the homemade stuffing with them. It's your gain... trust me. The other option is sauteed pork chops on a bed on herbed rice (again my beloved Turkey Herbs) with a creamy sauce. Either is a meal in and of itself :o) A 8x6 has two pork chops for $14, a 13x9 has four - five chops (depending on size) for $24.

Lemon Cupcakes -- In honor of my good friend's birthday, lemon cupcakes are on the menu. These little wonders are several of my friend's favorite thing that I make. Made with fresh lemon juice and frosting so fluffy you will think you are in heaven. $12 dozen or $1.25 each



Wednesday, July 13th
Roasted Shrimp & Orzo -- I've been trying to figure out how to incorporate shrimp into the menu. I was looking through my beloved Barefoot Contessa Cookbooks and remembered this little gem. This is a great main course salad served at room temperature. I couldn't be the only one who just smiles when eating orzo. I hardly ever eat it, but when I do, I love it. It just makes me smile. Orzo is the base of this salad. Also included is roasted shrimp, cucumber, red onion, green onion, feta cheese, fresh lemon and fresh dill. It's dressing base is extra virgin olive oil. This is light, healthy and incredible! I'm so excited to share it with you. If orders are low, it's just more for me :o) Quart $7, Gallon $25

Homemade Breadsticks -- 6 for $3

Fruit Tart -- A shortbread crust with a whipped, creamy center topped with fresh fruit, probably strawberries, kiwi, and blueberries, but it depends on what looks freshest at the store. $15

Taco Soup -- This is a humble little recipe, but oh so good. I love the flavors and the way they meld together. Made with lean ground beef and homemade refried beans. Taco Soup Fixin's -- Many times by the time I finish taco soup, I don't worry about the fixin's that make it sooo good. To avoid you not getting your maximum enjoyment I am taking care of that for you. Cornbread -- At the risk of bragging, I make a very, very good cornbread. Its mild and not to "corny". A perfect accompaniment to the taco soup. Served with homemade honey-butter. An 8x6 pan for $7

German Chocolate Cupcakes -- In honor of another friend's birthday German Chocolate Cupcakes are on the menu. Moist German Chocolate Cake with homemade frosting. Weisenburgers don't eat traditional pecans in the frosting. We opt for toasted slivered almonds. I've made this frosting countless times and never had a complaint, so I'm willing to bet that you will love it. July 4 - July 8 Menu

I hope that everyone has a great July 4th weekend! It's a great time to have friends and family close! In the last post and email, I offered two simple items for July 4th to supplement any get togethers you may be attending. You can still order them if you would like.

You will notice that there are no Wednesday options due to a catering commitment. If you would like a quote on personal event, Lake Powell trip food, etc., please feel free to ask and I will provide a quote!

Friday, July 8th
Lasagna -- Layers of pasta, sausage tomato sauce, tri-cheese layer, and then everything again. Six layers of goodness. Fresh herbs make it even better! It's oh so good and screams comfort. One of my favorite things to make and serve... mostly because I enjoy compliments :o) 9x13 $24, 8x6 $13

French Bread -- Homemade French Bread with garlic butter. $3

June 26 - July 4

This is the fifth week of my little venture. I've really enjoyed cooking meals and hope that you have enjoyed it also :o) I'm very excited about the upcoming week. Some of my favorite meals are on the menu!

Monday, June 27th
Chili Verde. This is a great recipe. Definitely one of my favorites! This Chili Verde has shredded, tender pork in a medium spicy green sauce which includes green chilis, onions, and tomatoes. It has substantially more meat in it than most Chili Verde at restaurants. I use Chili Verde several ways. My favorite it to make burritos or enchiladas with it and smother it with lots of cheese. You can also make chimichungas with the meat and smother them. You can use for the meat for nachos. Lots of people just put it in a bowl and eat it with tortillas. However you choose to use it, you will love it! I will make enchiladas with the meat and smother them with cheese if you like.
Straight Chili Verde: 1/2 Quart $9, 1 Quart $16.

Homemade Refried Beans. I hate to repeat an item so quickly; however, you have to have refried beans with any Hispanic meal in my mind :) Pinto Beans soaked and slow cooked and mashed with just the right amount of seasoning to enhance the main course. Quart $5, 1/2 Quart $3

Lime Cilantro Rice. Tender and slightly sweet rice with a touch of lime and cilantro. Cooked with coconut milk to enhance flavor. Quart $5, 1/2 Quart $3

Chicken Lemon Basil Salad. This is actually a recipe that I created. The base of this salad has fresh lemon juice and zest combined with fresh basil. I've been so excited to offer it, but had to wait until fresh basil was available. Combined with the lemon basil base is penne pasta, cucumbers, grape tomatoes and red onions and tender oven roasted chicken. This recipe screams summer -- almost as much as the heat that we are having :o) Quart: $7.50

Homemade Breadsticks. Freshly baked breadsticks are also on the menu. Nothing says home and comfort like homemade bread. Let me make it for you! 6 breadsticks $3

Chocolate Bundt Cake. This is my husband's favorite cake. It is made in a bundt pan and presents wonderfully. It is a very dense moist cake. If it wasn't rich enough, there is a pound of chocolate chips baked into it. I like it best the day that it is made. Mark likes it best the next couple days -- he says it tastes like a truffle. This is a great cake. You will love it! $22

Meatloaf. 1 1/2 pounds (pre-cooked) of meaty delight. The pinnacle of comfort food! I've tried a lot of meatloaf recipes and this is by far my favorite. I hate meatloaf swimming in grease, so I use extra lean hamburger and put the meat on bread so that the fat soaks up the grease, not the meatloaf. It is topped with barbecue sauce. Enjoy! $14

Mashed Potatoes. I love, love, love mashed potatoes. They are my favorite part of Thanksgiving and practically any meal. These potatoes are mashed and seasoned to perfection. I hear that I make incredible mashed potatoes. Since they are one of my ultimate favorite foods, it wouldn't surprise you that I have perfected them (at least in my mind!) Made only with Idaho potatoes (you would expect that living on a potato farm for years!) If you order loaded you will receive a wonderful mixture of butter, sour cream and cheese (thanks Karen Scott for this inspired idea!), plus crumbled bacon pieces to take your potatoes to the next level.

Glazed Carrots. Baby carrots simmered to tender goodness in a rich, sweet glaze. 1/2 quart $4

Vanilla Cupcakes with Strawberry Filling and Strawberry Whipped Cream Frosting. I've been told that the angels sing when I make these. Moist vanilla cupcake with a strawberry filling tucked inside as a sweet surprise. All topped with a whipped cream frosting with read strawberries in it. One of my signature desserts! $12 per dozen or $1.25 each

Baked Beans. With thoughts of the 4th of July weekend, I will be offering baked. beans again for your family get togethers. Made with apple wood smoked bacon, red and green peppers and a sweet sauce that will make you so happy you ordered! Quart $6

Coleslaw. Creamy coleslaw with red onions, carrots and a wonderful creamy sauce all together with slice green and red cabbage. Quart $5
